Coconut Lemon Energy Bites

These bad boys were my own twist of a Pinterest recipe find. They really change the game for bites in my house. They taste like springtime, sunshine, happy, lemony and flakes of coconut and cashews. You'll understand the passion if you make them. These are a great healthy snack for on the go and your family and friends will love them too. The recipe is below:  


Coconut Lemon Energy Bites

  • 1 Tbsp Chia Seeds
  • 1 Tbsp Flax Seeds 
  • 1/4 Cup of Hemp Hearts
  • 1/2 Cup Unsweetened Shredded Coconut
  • 1 Cup pitted Dates (about 16)
  • 1 Cup Cashews
  • Zest from a Lemon
  • 1 & 1/2 Tbsp of Lemon juice



Throw all ingredients in a food processor, pulse until well combined and sticky. Roll into balls (about a tbsp each) and store in the fridge in an airtight container. Enjoy!


Makes about 16 bites.

You can switch out the nuts for whatever you like or have on hand. You can roll these in coconut flakes if you like too. Or do other swaps for any other creative ideas you have. Let me know how they turn out.
