Banana Ice Cream

 

I love bananas, not just for their flavor but for what they bring to the table, nutrition wise. They have potassium, which is an important mineral that functions as an electrolyte. Magnesium is also an important mineral that helps with nerve and muscle functions. Vitamin C is a much-needed component for growth and repair of tissue in the body. Bananas also contain B6, which aids in your sleep and nerve functions, as well as your metabolism.

Bananas nourish your body in so many ways, why wouldn't you want to make ice cream with them. In my opinion, homemade is much better than most store bought ice cream with added sugar and lots of preservatives.

Most every time I buy bananas, I forget about them. Not sure why, but I usually realize when they are just starting to brown. I peel them and chop them in big chunks. Then I throw them in the freezer for ice cream making. Maybe I do it intentionally, with banana ice cream in mind. No biggie.

There are lots of variations to this ice cream but I use bananas as the base. You could add any other frozen fruit in addition to or instead. I also use milk to make it a little creamier. 

(Makes 1 serving)

1 Frozen Banana

1/4 cup cashew milk, unsweetened vanilla, or any other milk you like

1/2 tsp of vanilla extract

 

Other additions: chopped dates or honey for sweetness, protein powder, frozen berries, cocoa powder (for a chocolate kick,) etc...

 

Blend all together until it's a nice smooth consistency.

Add any topping you would like (nuts, seeds, hemp hearts, cocoa nibs, fresh berries, or whatever you like)

And that's it. Super easy! Every time I have my niece over for dinner, she asks if I have any frozen bananas for ice cream and I most often do:) Enjoy! Let me know what you think.
