Kale "Nola"

1  cup mixed nuts (I use pecans, almonds, cashews, hazelnuts mixed.)

1/3 cup unsweetened shredded coconut

1/4 cup pumpkin seeds

1/4 cup sunflower seeds

2-4 handfuls of chopped kale

1 scoop of protein powder

1 tbsp pbfit powder

Start by chopping those nuts up with a chopper. Put the chopped kale into a big bowl, add all the other ingredients and mix up a bit. Pour on a sheet and put in the oven for 10 min increments on 300 degrees. Stir after 10 mins and cook for another 10. Keep stirring it all together until the kale is crispy. Let it cool. I also like to crumble the kale a bit so the pieces are not too big. Store in a jar for snacking.

You can toss with a bit of coconut oil before baking, but it's not necessary. You can also add some chopped dates or dried fruit of sorts if you like. Add these after it comes out of the oven and cools.

Enjoy over yogurt, fruit, ice cream, or just by itself out of the jar.
